The Dream Relocated...
Thanks for coming by today. Not long ago, we were just a little diner on Highway 7, just south of Fowlers Corners. After six years there, we took the saying “Go big or go home” literally and we made the move here to the old Toby’s Restaurant and Bar where Mark worked in the 80s. The kitchen here is literally the size of the old diner and we can seat five times the people. Despite the change, you will still find Mark cooking in the kitchen or sitting at a booth playing backgammon. We strive to maintain the same comfortable atmosphere as if you dropped in on your neighbour for dinner. We have a lot of fond memories of our time in Fowler’s Corners and of the great relationships begun there – we would never have made it without y’all. Thank you.
Mark’s Background:
Mark grew up in Peterborough but started cooking when he went west. In his own words: “Started cooking in Kitimat, B.C. Fresh out of high school I worked at The Keg. First job was at the Kitimat Hotel. I went from dishwasher to Head Chef within a year. Came home to Peterborough and started apprenticeship at the Red Oak Inn. The following year I went to George Brown College at Kensington Campus to begin the first part of my apprenticeship and later earn my Red Seal designation.
I stayed in Toronto and finished my apprenticeship work at the Albany Club as Banquet Chef, Bistro 990 and Elmwood Women’s Club and the Pilot Tavern, Yorkville. Then spent 12 years in Toronto working a lot down in the Beaches, notably at Babbage’s in the Beach. I took an Italian Cuisine course and was to spend 6 months at George Brown and 6 months in Italy. Instead I married the girl of my dreams, who was Italian. Never went to Italy. Moved back to Peterborough where I worked at Lakefield College School for approximately 7 years. Then I ran the kitchen at Elim Lodge Christian Resort and Retreat Centre, a 250 seat dining room on Pigeon Lake for 6 years. In 2007 I created and opened Mark’s Finer Diner at Hwy 7 just south of Fowler’s Corners. I am happily remarried and grateful to work with my sons.
